a few of my favorite things…

I’ve had a habit for a really long while now.

I peruse the internet, see something I like, quick, take a screen shot of that liked something, and then leave it to clutter my desktop for weeks to come. Then eventually I’ll begin to organize these aesthetically pleasing somethings into ambiguously named folders, i.e. “i like” or “april inspiration.”

I have a lot of these somethings floating around at the moment. So I thought I’d share some with you. Their whereabouts come from the multitude of design/cooking blogs I scour on a daily basis.

it’s that time of year again where images of succulent gardens start popping up everywhere. I unfortunately don’t have anymore indoor space for anymore succulents. We’re busting at the seams I tell ya!

A Game of Telephone

This past Sunday Alex and I went over to my parent’s for breakfast and I made crepes. Before leaving our house I called my parents to check if they had nutella before I went and bought some. So I called to ask:

Me: Do you have nutella?
Dad: What?
Me: nutella?
Dad: Whatttt?!?!

I became frustrated and just bid him goodbye. When we got there my dad asked, “What did you have to tell us?” I as confused…but then realized that instead of hearing nutella my dad heard/thought, “I have something to tell ya.”

I guess Alex and I are at that age…both my parents thought we were about to announce that I’m with child. Sorry anxious to-be grandparents…but no.

After reading this post back to myself I have no idea how my dad actually got THAT out of “nutella.” oh wells.

oh and if you’re wondering, I made strawberry/nutella and sweet cream cheese/apple cinnamon crepes. They were faboo.

Happy World Nutella Day

It’s that time of year again…the week that I have a jar of nutella in the house for a recipe and consume it all within 3 days. I purposefully thought up a concoction that wouldn’t use the entire jar…so I could have ample spoonage time with my favorite treat.

This is my third year to participate, you can see last year’s crazed post here…and the year before that here.

I made nutella cupcakes…..from a Betty Crocker box mix. I KNOW. shame. But they were still kick ass and were enjoyed by the masses. That’s right….I shared, with my office, my parents, Alex, and a friend who brought some home for her three other roommates. These cupcakes were distributed to the masses…not bad for a $2 box mix!

Rather than go into details about how they were made I’ll simply state that I made chocolate cupcakes with chocolate butter cream frosting and then dolloped gobs of nutella on top. Please drink with an ice cold glass of milk :-)

Sweet Treats

This past week I was a busy baker. Let’s just say I owed a few people after tremendous favors they’d done for me. So how do I repay tremendous favors you ask? With baked goods silly!


I prepared my famous Nutella Trifle for my mom’s office. They were all smiles when I brought it in and I heard that it was a big hit.


Fast forward two days later, I owed another friend for dealing with a major headache for the past four months. I won’t get into it. BUT when I asked her what her favorite flavor or cupcakes were she responded, “strawberry!” How very convenient because my strawberry cupcakes I believe are my best cupcakes. They come out so splendidly delicious and this time was no exception. I sent her home with at least 6 and still had leftover cupcakes and icing. The cupcakes are gone…but there’s still a bowl of icing in the fridge…it’s almost a week old (gross I know) but it’s so painful for me to have to throw it away. It’s on my to-do list for when I get home, calm down people, I’m not going to eat it, or even roll around in it…much.

MY SWIM MEET, oh yeah and the rest of my weekend…

So the swim meet went well. Not great, but good. We got there about 25 minutes into the warm up which caused me to freak out repeatedly on the way up there. Especially when we had to stop and get directions.


was my reaction when we made a wrong turn and had to turn around. Frantic Eryn was in full swing. You could tell especially when we parked the car as I was 28948503 steps ahead of both my mom and Alex ready to plunge into the warm up pool the first chance I got.

Turns out, I was worried for nothing. I had more than enough time to warm up and do a few practice starts off the blocks. To my surprise our friends Kearney and Robin showed up as well to cheer me on. I was really touched by the gesture, especially since they had to wake up at 7am on their Saturday morning.

I was signed up for five events and had no clue that Masters meets run A LOT quicker than the meets I was used to in high school. Instead of 87 heats separating my events from each other I only had one heat separating my first two events. EEK. Especially since my first two events were my hardest. You can see me swimming the 200 free in the below video that Alex took. (You can’t miss me, I’m the blinding white spot in lane 2). You can also hear my mom exclaim during the first 50 yards, “Pick up the pace.” Yayyy. Unfortunately, I listed my best high school time as my seed time and was thus put into a heat with people who could still swim that time…I on the other hand cannot. And in this video it shows….so yes, I do come in last in this event, and to save me misery Alex said he stopped taping when he realized that. AWWW how sweet of him.

Despite the pain and overall fatigue that came around with each event I really had a great time. It was nice to be back in the meet atmosphere and there were a handful of NITRO swimmers present that cheered me on.

Someday I’ll swim at another Masters meet, but first I want to get a wee bit stronger in the water…and next time I’ll learn from my mistakes and won’t sign up for more than 3-4 events in one day.

After the meet on Saturday I spent the rest of the day primarily in a horizontal position on a bed or sofa or floor. Drooling was involved as well as Saci snuggles. It’s as if she knew how bad my body was hurting.

Today I had a spotting. A celebrity spotting on South Congress!!!! Let’s just say that I was sitting at a crepe trailer while Alex retrieved the nutella and strawberries crepe from the window. I then peered a great pair of sandals walking by with a great dog attached as well. “What cute sandals!” I exclaimed to myself, although I heard myself gasp. Then I gazed up at the owner of cute footwear and exchanged a lip pursed smile with Drew Barrymore. It was pretty coo!

Happy World Nutella Day!

picture-13How much do I love Nutella you ask?

Way too freakin’ much! It gets to the point where my answer to the above question gets tiring and overwhelming. I just don’t think I have the words to describe it. Perhaps the words below will help you understand…my sickness:

I’ve mentioned/posted/screamed/cried about how much this chocolatey, hazelnutty spread means to me! It’s just the best thing EVER. And the fact that thousands, nay, millions of people in this world feel the exact same way about it…makes me a happy little addict! Thanks for the empathy folks!


I think the crazy meter for the above image is measuring off the charts. I thought it’d be cute to smear Nutella on my face. That idea = not cute! Don’t even ask to see the other Nutella smeared face pictures. Alex snapped away without notice…I still can’t believe I let this one out of the vault!

Although, I’d love to meet the person (more than likely a woman) who really does need/love Nutella more than me. I bet there are about 3.424 people that maybe fit this description.

To find them I’d ask them the following questions:

1.) Do you only allow yourself to buy Nutella biannually?

2.) If and when you buy it does it have a shelf life more than 48 hours?

3.) When you have it in the pantry do you wake up thinking about it?

4.) Do you think about it so much and crave it so much…that you feel shameful?

5.) Does the shame take over and thus, you feel the only appropriate way to eat Nutella is quickly, in a dark pantry, and with your back turned on the world?

6.) Driving home from work, do you hope you beat your significant other home so that you can enjoy about 2-14 minutes of silent Nutella ingesting?

7.) Do you prefer your Nutella in its purest form? On a spoon…with ice cold 1% milk on the side?

8.) If you found a knife in the sink (left by your significant other) with globs of Nutella still left on it…would you pull it out and lick clean?

I feel the questionaire is sufficient…is there anything I’m missing? By the way, don’t feel sorry for me people. I don’t need your pity! And yes, my life is really as sad as it seems!

Below is my second favorite way to eat Nutella! In a crepe with strawberries! I wrote about my first Nutella crepe experience here…and guess where Alex and I are going this weekend to have more?

Crepes con Nutella e Fragole (Crepes with Nutella and Strawberries)

first you have to gather a few things: 1 C all-purpose flour, 2 eggs, 1/2 C milk, 1/2 C water, 1/4 tsp. salt, 2 tbsp. butter (melted), gobs of Nutella, freshly cut strawberries

1.) to prepare the crepes: in a large mixing bowl, whisk together the flour and eggs
2.) gradually add the milk and water, stirring to combine
3.) add the salt and butter, stir until smooth
4.) heat a lightly oiled griddle/frying pan over medium high heat
5.) scoop the batter onto the griddle, using approx. 1/4 C for each crepe/tilt the pan with a circular motion so that the batter coats the surface evenly
6). Cook the crepe for about 2 min. on both sides until the it turns a light golden brown
7.) Transfer crepes to a plate wrapped in a towel to retain the heat until you’ve finished the rest
8.) now for the amazing, spread one side of the crepe with EXTREMELY generous amounts of Nutella
9.) add fresh strawberries to your liking, not too many and fold twice (so it’s a quarter of the size it was originally)
10.) top with Nutella drizzles…c’mon you knew that was coming! and enjoy with ice cold milk.



I devoured my ooey gooey delight while watching “Lost,” seriously, what could be better?

P.S. When I sent Alex to the store to gather ingredients for the above recipe I forgot to tell him to pick up strawberries, oops, it just left more room for fabulousness!
